Jam Filled Cookies

Hello everyone,

I decided to begin writing this blog post just as I finished putting my last batch of cookies in the oven. Me and my Mom decided to dedicate our Sunday to making our Christmas cookies for this year. This is a tradition that has been in my house for as long as I can remmember. We always make the classic cookies that we have been make every Christmas but every year we decide on one new cookie recipe to try out as well. It is fun to experiment and try new things but at the same time keeping the tradition. Baking a large amount of cookies is never easy but the end result will most definitely make your tummy happy. Make baking cookies an event, it is the holidays after all. Invite some family or friends over, put on some Christmas music and spend the day baking and enjoying each others company.

For today’s post I decided to write about me and my families favourite recipe for the holidays which are jam filled cookies. These cookies are not that difficult to make and the end result is amazing. These cookies are soft, fluffy and the perfect ratio of sweetness. Paired with the jam and a little icing sugar on the top they are the perfect cookie.

The ingredients for this recipe are basic and easy to get your hands on. For this recipe you need a lot of everything because it makes a large number of cookies. The exact amount depends on the thickness of your cookies.

You are going to want to make sure that you mix your dry and wet ingredients separately before mixing them together. This will ensure that you will get the perfect cookie texture.

As I said before the amount of cookies depends on the thickness of them and the size of your circles. I like to use the bottom of a shot glass but whatever works for you to make the shape of a circle works just fine. Since you are going to be making these cookies into little jam sandwiches you want to make sure that you have enough circles to make pairs. To add a little more colour cut a little shape into the top of one of your pairs to let the jam show through when serving.

Once they come out of the oven you want to put them on a cooling rack to cool completely.When ready to serve add jam to one of your pairs and stack them together to make a little cookie sandwich. The flavour of jam that you use is totally up to you but I personally like to use raspberry jam. To take these cookies taste and presentation to the next level sprinkle some icing sugar over top of them.

Jam Filled Cookie Recipe 

Ingredients 

Directions 

  1. Preheat the oven to 375 degrees and line your baking trays with parchment paper.
  2. In a bowl cream butter and icing sugar until fluffy
  3. Once the butter and icing sugar has been mixed beat in the vanilla and the eggs
  4. In another bowl combine the salt, flour and baking soda.
  5. Once you have your two matures gradually blend in the dry ingredients into the wet ingredients.
  6. Roll the dough into a bowl and wrap it in parchment paper. Put the dough in the fridge for 10 minutes.
  7. Roll out dough and cut into circles or what ever shape the you would like and put them onto a baking sheet.
  8. Put them into the oven for 8 minutes and when done lay them on a cooling rack to cool.
  9. When you are ready to serve spread the flavour of jam or your choice onto the cookie and sprinkle with icing sugar.
