LEMON BLUEBERRY COOKIE RECIEPE

Hello everyone!

I have been on a baking kick recently which means I have another recipe to share with you all. These have to be one of the best cookies I have ever made, next to my classic chocolate chip cookies. Lemon and blueberry are such a great pairing. I made these for a small family gathering and they were all gone within the first 10 minutes of putting them on the table, yes they are that good! These cookies are so soft, buttery and make for a fresh summer dessert. If you do try making these cookies send me a picture on instagram @alittletouchofgold. I would love to see how they turn out!

INGREDIENTS

LEMON GLAZE

DIRECTIONS

COOKIE DOUGH

  1. Preheat the oven to 325 F
  2. With your blender or hang mixer, mix your butter, sugar, lemon zest until light and fluffy. About 3 minutes.
  3. Add in egg and mix until combined.
  4. Add the lemon juice and vanilla extract and mix until combined.
  5. Add salt, baking powder and baking soda and mix until evenly distributed.
  6. Add your flour and mix until fully combined. You want to make sure not to over mix the dough, this will prevent the cookie from being soft.
  7. Fold in your blueberries gently by hand to not break them.
  8. Roll dough into about 1-2 inch balls and place them on a cookie tray or a tray lined with parchment paper.
  9. Bake for 11-14 minutes or until the bottoms are slightly brown.
  10. Allow the cookies to cool completely on cooling racks before adding the glaze.

LEMON GLAZE

  1. Place all of your ingredients into a bowl and whisk them together until you have a consistency that can be drizzled.
  2. Drizzle over your cooled cookies
  3. Eat and enjoy!

**When storing these cookies avoid putting them in an enclosed container as it will lead to the cookies getting mushy
