THE BEST BLUEBERRY MUFFIN RECIPE

Hello everyone!

Over the past week I have been baking up a storm, trying some new recipes that I have dying to try out. One of them was these Blueberry Muffins and considering how much of a hit they were I knew I needed to share them with you all. These muffins taste like something you would find at a bakery and are so easy to make. This recipe has two parts, the muffins themselves and the streusel topping. If you want something new to bake this week I highly recommend giving these a try. They didn’t last more then two days in my house. DIRECTIONS

  1. Preheat your oven to 375°F and line 2 muffin tins with liners
  2. Start by making your streusel topping. In a small bowl mix all of your ingredients together with a fork until crumbly and set aside.
  3. Now its time to make your muffins. In a large bowl add in your flour, baking powder and salt. Set aside.
  4. In a mixing bowl whisk together your eggs and granulated sugar with a mixer until combined. The add in your yogurt, oil and vanilla extract until the mixture is a pale yellow colour.
  5. Add your dry ingredients to your wet ingredients and mix with a paddle attachment until combined.
  6. In a small bowl add in 1 cup of your blueberry and 1-2 tablespoons of flour. Toss them until all of the blueberries are covered with a thin layer of flour. Fold them gently into the batter.
  7. Spoon the batter into your prepared muffin tins, filling about 2/3 of each cup. Top each one with your remaining blueberries and then cover the blueberries generously with streusel topping.
  8. Bake for 18-20 minutes or until toothpick inserted comes out clean.
  9. Eat and enjoy!

  1. OK so just when I thought you topped yourself you do it again. These muffins were amazing, the topping was divine and obviously needs to be repeated very soon. And you could probably make it with any fruit and taste just as amazing.
