Hello everyone!
As you all know baking is one of my favourite pastimes. There is something about it that I find so relaxing and therapeutic. This past week I made this delicious Italian Lemon Tort. I was craving something that was fresh for the spring time and had some element of lemon incorporated in it. I landed on this Italian Lemon Tort and I could not be happier to bring this recipe to you. Keep reading to see how to make it! INGREDIENTS
- 1 1/4 cup of flour
- 2 tsp of baking powder
- 1/4 cup butter plus 1 tbsp for melting
- 1/2 cup of sugar
- 2 eggs
- 1/4 cup of whole or 2% milk
- 1/4 cup lemon juice (or juice of whole lemon)
- 1 tsp of vanilla extract
- Confectioners sugar for the top


DIRECTIONS
- Mix the flour and baking powder in a bowl and set aside.
- Melt 1 tbsp butter and brush it evenly on all sides and bottom of your 9.5” pan (a pan typically used for cheesecake)
- Coat the pan with flour and tap off any excess. You want all sides covered with a nice coat of flour to prevent the tort from sticking and to create a flakey outside.
- Use a mixer to cream your butter and sugar until fully combined.
- Add in your eggs one at a time until evenly blended.
- Add in your milk, lemon juice and vanilla. Mix until fully combined.
- Slowly add in your flour and mix it until you have a creamy, smooth and thick batter.
- Pour your batter into the coated cake pan.
- Bake at 350°F for 30-35 minutes or until a toothpick inserted in the middle comes out smooth.
- Remove from the oven and let it cool in the pan for 10 minutes.
- Unclip the sides of the pan to reveal your gorgeous cake. Let it stand for another 20-30 minutes or until cool.
- Add confectioners sugar on the top when your read to serve.
- Eat and enjoy!
