Hello everyone!
Today I am bringing you the recipe of the summer. Strawberry Shortcake is such a light and sweet treat to have in the summer months. With strawberry season upon us there is truly no better time to make this recipe. It is super easy and perfect for a summer party.

INGREDIENTS
For the Cake
- 3 cups of flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 3/4 cup unsalted butter
- 1 1/2 cups sugar
- 4 eggs
- 1 tablespoon vanilla extract
- 1/4 cup vegetable oil
- 1/4 cup sour cream (regular, full fat)
- 1 cup milk
For the Strawberries
- 1 pint/case of ripe strawberries
- 2 tablespoons sugar
For the Whipped Cream
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract


DIRECTIONS
For the Cake
- Preheat the oven at 350°
- Prepare 2 9” cake pans by greasing the sides and bottom of the pan with butter. Then line the bottom of the pan with parchment paper (this is crucial to ensure it doesn’t stick)
- In a bowl, combine flour, baking powder and salt. Mix together, then set aside
- In an electric mixing bowl, beat butter until smooth. While mixing slowly add in your sugar and beat until the mixture is light and fluffy
- While mixing, add eggs one at a time. Wait for 20 sections between each egg to make sure the batter is very light and fluffy
- Add vanilla and oil, blend until combined
- Add sour cream and blend
- Put your mixer speed on low. Add in half of your milk, then half of the flour mixture. Repeat. Blend all the ingredients until combined and smooth. Try to get out all clumps.
- Divide your batter evenly into your prepared pans
- Bake for 25-30 minutes at 350°F or until toothpick inserted comes out clear with no wet batter
- Cool cakes in pans for 5-10 minutes, then carefully remove them from the pans to continue cooling on a wire rack. Once the cakes are completely cool you can begin assembly.
For the Strawberries
- Dice your strawberries and add to a bowl. Dice them into small cubes as well as some slices to garnish.
- Cover them in sugar and mix until combined
- Put them in the fridge until assembly
For the Whipped Cream
- In the bowl of your electric mixer, add in your heavy cream and powdered sugar.
- Mix on high until a fluffy cream consistency forms, it should be able to hold a soft peak

ASSEMBLY
- Place your first layer of cake on a cake stand or plate. You might want to add some whipped cream to your plate to ensure the cake does not slide.
- Spread half of your whipped cream mixture on the first layer of cake. Add half of your strawberry mixture evenly over the whipped cream. Try not to get too much liquid from the strawberries when placing your strawberries on your cake.
- Add your second cake layer on top
- Spread the rest of your whipped cream mixture on the top. Add the rest of your strawberry mixture to the top. Place your sliced strawberries on the cake where you please to garnish.

Ok so not only does this cake look delicious, it’s definitely the best strawberry shortcake I have ever eaten. And you can’t stop at one piece. Looking forward to the next time you make it.
