Hello everyone!
Fall is quickly approaching and that means that fall baking can commence. This is my favourite time of year to bake and come up with new recipes to share with you all. I love the season’s flavours including pumpkin, cinnamon, apples and more! Today I am bringing to you my first recipe of the season- a Pumpkin Loaf with Streusel Topping. This recipe was such a hit that it was gone in a day. The moist and fluffy loaf in combination with the sugary streusel topping is the perfect pairing. Cozy up on the couch with a tea or coffee and this pumpkin loaf for the perfect fall afternoon.

Ingredients
Pumpkin Bread Batter
- 1/2 cup butter
- 1 cup sugar
- 1/2 cup light brown sugar
- 1 egg
- 1 tsp vanilla
- 1/4 cup sour cream
- 1 cup pumpkin
- 1 1/2 cup flour
- 3/4 tsp salt
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
Streusel Topping
- 1/4 cup of melted butter
- 1 tsp cinnamon
- 2 tbsp light brown sugar
- 1/2 cup flour
Directions
- Preheat your oven to 350F and butter a loaf pan. Set aside.
- Soften your butter and place it in a bowl of a stand mixer with your sugar and light brown sugar. Mix until fully incorporated.
- Add your egg, vanilla, sour cream and pumpkin to the bowl and mix until combined.
- In a seperate bowl mix together your flour, salt, baking powder and cinnamon.
- Slowly add your dry ingredients to your wet ingredients in the stand mixer. Mix on slow until combined and a thick batter forms.
- Place the batter into the loaf pan.
- To make the streusel topping, melt your butter and add in your brown sugar and cinnamon. Place the flour into the mixture and mix until crumbly. I find it’s easier to use my hands at this stage.
- Sprinkle the streusel over the pumpkin bread batter.
- Bake in the oven for 60-70 minutes or until toothpick inserted comes out clean.
- Once done, allow to cool.
- Eat and enjoy!

I must admit I’m not a huge pumpkin fan but this loaf is utterly amazing. The combination of flavors just makes you want to eat more. Definitely a repeat recipe.
