Hello everyone!
I made these Pumpkin Spice cookies on a whim one day and I have never recived so many compliments on a recipe before. They were gone within a day and have been requested three times in the past week alone. The cookie itself is so soft and has the perfect balance of pumpkin. These are essential for the fall season and are sure to bring that cozy treat to any day or event.

INGREDIENTS
For the cookies
- 1/2 cup butter
- 1 cup granulated sugar
- 1 cup canned pumpkin pie mix or regular pumpkin
- 2 large eggs
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 1/2 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 2 cups of flour
For the frosting
- 1 cup salted butter
- 4 cups of confectioners powdered sugar
- 2 teaspoons vanilla extract
- 2 tablespoons milk

DIRECTIONS
For the cookie
- Preheat your oven to 350°F
- In a bowl of a stand mixer cream your butter and sugar until light and fluffy
- Add eggs and pumpkin mix
- In a seperate bowl sift your baking powder, salt, cinnamon and pumpkin spice together
- Add your dry ingredients to your wet ingredients
- Mix until combined
- Onto your cookie sheet drop a spoonful of batter and flatten slightly with the back of the spoon
- Bake for 10-12 minutes
- Take out of the oven and allow them to completely cool on a cooling rack before adding the frosting
For the frosting
- In the bowl of a stand mixer cream your butter for 1 minute
- Add in your powered sugar one cup at a time and mix until fully combined
- Add in your vanilla and milk
- Continue to mix for another 2-3 minutes
- Spread on top of your completetly cooled cookies
- Sprinkle some cinnamon on top of the frosting
- Eat and enjoy!
