FALL HARVEST SALAD

Hello everyone!

Back again with another fall recipe but this time it’s not a dessert! I am sharing my Fall Harvest Salad with you all today. This is such a great side to rotate into your meals this fall season. It is such a yummy and satisfying salad that incorporates some our favourite flavours of the season.

Note: this salad tastes best if you let it sit in the fridge for an hour or so to allow all of the flavours of the ingredients to sit and fuse together

INGREDIENTS

DIRECTIONS

  1. Preheat your oven to 400 and cut your sweet potato into small cubed pieces. Bake for 20-25 minutes or until soft. Set aside.
  2. Wash and finely chop your kale. Massage your kale with a small amount of olive oil to make it tender. Kale tends to be very hard and this helps to make it softer.
  3. Wash and cut your apples into slices
  4. Start assembling your salad by adding your kale, sweet potato, apples, dried cranberries and walnuts.
  5. Make your apple cider vinnagrette by whisking all your dressing ingredients together in a small bowl
  6. Add your vinaigrette to your salad base and toss until evenly distributed
  7. Sprinkle on your desired amount of feta
  8. Eat and enjoy!
